World Whiskies Award

Congrats to A. Smith Bowman Distillery, whom picked up the title of World's Best Bourbon at the World Whiskey Awards for their John J. Bowman Single Barrel Bourbon. This is a delicious whiskey for slow sipping and mixing craft cocktails but I also love using it in my pecan pies and brownies! Here is my favorite recipe for bourbon brownies with a little extra help from bourbon's best friend....bacon.

Bourbon Bacon Brownies, adapted from BethCakes

1 c. mini chocolate chips, divided
1/2 c. unsalted melted butter
1 1/4 c. granulated sugar
1/4 c. high quality cocoa powder
1/3 c. John J. Bowman Single Barrel Bourbon
2 large eggs
1 tsp. vanilla
Pinch of cinnamon
3/4 c. all purpose flour
4 slices of bacon, cooked and chopped

Frosting

3/4 c. soft butter
1/4 c. caramel sauce, homemade or store bought from the ice cream section
1/2 tsp. vanilla
1 1/2 c. powdered sugar
4 slices of bacon, cooked cut into pieces

Directions:
Preheat oven to 350. Line a 9 x 13 baking pan with foil and lightly coat with cooking spray. Mix melted butter with 1/2 c. chocolate chips, whisking until chips have melted. Whisk in sugar, cocoa powder, bourbon, cinnamon and vanilla. Add eggs and whisk until well combined. Whisk in flour, mixing just until combined. Fold remaining chocolate chips and the 4 slices of chopped bacon into brownie batter.  Pour batter into pan and bake for 35 to 40 minutes until a toothpick comes out clean. Cool brownies completely before cutting into squares.

Frosting Direction:
Cream butter on medium with mixer. Add caramel and mix until smooth. Add vanilla and powdered sugar, mixing until combined. Pipe or dollop frosting onto cut brownies and top with a small piece of bacon.
