This is around the time of year when gardens start growing like crazy and everyone begins offering each other their excess zucchini & squash. I never turn these offers down because when they see a zucchini, I see a moist slice of chocolate bread. This may be my most favorite recipe! Yellow squash & green zucchini work interchangeably in this recipe as do carrots if you happen to have some. Bake on friends!
Chocolate Zucchini Bread
2 c. all purpose flour
2 c. sugar
3/4 c. high quality cocoa powder
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
4 eggs
1 1/4 c. vegetable or canola oil
3 c. grated zucchini, squash or carrots (do not squeeze)
Grease loaf or bundt pan. Preheat oven to 350.
Mix dry ingredients until combined. Whisk in eggs and oil. Fold in veggies and pour into prepared pan. Bake for 45-65 minutes, until toothpick comes out with crumbs only, no batter.
Cool and enjoy!
